Preparation
1. Preparing the Dates
If using Medjool dates — put them directly into the food processor without soaking. If using drier dates — soak in warm water for 15 minutes, then drain and roughly chop.
Process the dates in a food processor or blender using the pulse function, not continuous running. The goal is a rough, sticky mass — like wet sand — not a smooth paste. If the processor struggles, add a tablespoon of warm water to help.
2. Mixing the Mixture
Into a large bowl place:
- Blended/mashed dates
- Walnuts (coarsely chopped with a knife or briefly pulsed in the processor — not too fine)
- Cocoa powder
- Desiccated coconut (50 g)
- Orange zest
- Vanilla extract (or vanilla sugar)
Mix by hand or with a sturdy fork until everything is evenly combined. The mixture should be firm and pliable — you should be able to roll a ball that holds its shape. If the mixture is too dry and crumbly, add:
- A tablespoon of warm water
- A tablespoon of orange juice
- Or one or two more dates
If the mixture is too sticky (rare), add a tablespoon of cocoa or coconut.
Taste the mixture now: this is the ideal moment to adjust the flavour. Want more cocoa? Add another tablespoon. More citrus? Grate a little more zest. Not sweet enough? Add a tablespoon of agave syrup or honey.
3. Chilling the Mixture (Optional but Recommended)
Refrigerate the bowl of mixture for 20–30 minutes. Chilled mixture is firmer and shapes into perfect balls more easily. You can skip this step if in a hurry, but the result is neater when the mixture is cold.
4. Shaping the Balls
Pour extra desiccated coconut (or cocoa powder, or a mixture of both) into a shallow bowl for coating.
With damp hands, take mixture by the teaspoon (about 20 g per ball), roll between your palms into a ball. Immediately roll in the coconut and place on a plate lined with baking parchment.
Coating variations:
- Desiccated coconut (classic, white)
- Cocoa powder (dark, intense)
- Ground walnuts (crunchy)
- Ground pistachios (green, decorative)
- Cinnamon + icing sugar (warm, aromatic)
Repeat until all the mixture is used. This quantity makes about 20 balls.
5. Final Chilling
Refrigerate the finished balls for at least 30 minutes (ideally 1–2 hours) before serving. Chilling melds the flavours and makes the balls firmer and easier to pick up.
Tips
Why dates instead of sugar: dates are rich in natural sugars (fructose and glucose), fibre, potassium and magnesium. This recipe adds no refined sugar — all sweetness comes from the dates and any added vanilla. These are energy-dense but nutritionally rich fasting snacks — far healthier than fasting cakes made with flour and sugar.
For children: these date balls make an excellent fasting sweet for children as they contain no added sugar, are fun to make (children love rolling them in coconut) and keep well in the refrigerator for school lunches. Omit the cocoa for younger children — without cocoa, the mixture is milder and less bitter.
Orange or lemon zest: orange zest is the classic choice, but lemon zest gives a refreshing twist. Lemon zest is sharper — use it in smaller quantities (half the zest of one lemon).
Mixture variations:
- Replace walnuts with hazelnuts for a Ferrero Rocher effect with the cocoa
- Add 1 tablespoon of tahini for a more complex flavour
- Stir in dried cranberries or dried sour cherries for a sweet-tart contrast
- Add 1/2 teaspoon of ground ginger for a winter warming variation
- Cashew nuts (roasted) instead of walnuts give a creamier profile
Storage: keep in a closed container in the refrigerator for up to 7–10 days. At room temperature they keep for 2–3 days (they become slightly softer). They freeze very well — freeze in a single layer, then transfer to a zip-lock bag. Thaw at room temperature for 15–20 minutes.
